Erroneous Potato Salad

Potato salad, quintessential side dish for any food gathering. It’s a diverse dish. Modes of potato salad are as copious as mosquitoes on a hot muggy night sitting under Edison lights on the lawn.

I recently discovered another way to make potato salad, 86 the boiled eggs; quite by accident, chalking it up to age, multitasking, whatever?

I kept looking at its anemic, pale color, its pristine whiteness, and then a couple of days later I realized, “the eggs, the boiled eggs, were missing.”

It was a gathering of six close friends; all of the potato salad was eaten, none left over for potato salad sandwiches on soft white bread, yes a favorite of mine.

Guests are kind, forgiving; they’ll eat a bland white, mayonnaise potato salad that was well seasoned, and pretend to love it.

Mindfully, choose your guests, and keep making potato salad!
